Easy vegan chocolate chia pudding

I love chia seeds and use them every time I can. I use them in smoothies, granola, as a topping for salads, or homemade crackers. But this easy vegan chocolate chia pudding recipe is my favorite.

About this recipe

My kids gave me the title of best mom ever the day I gave them for breakfast this chia seed pudding. I can tell why; imagine waking up to a creamy chocolate breakfast. All topped with freshly cut strawberries and cherries and juicy and sweet blueberries.

It sounds like a perfect breakfast, right? And best of all, full of the healthy benefits of chia, is gluten-free, made with homemade dairy-free milk, has a great texture (it’s a tapioca pudding situation), and has amazing flavor.

The easiest way to make chocolate vegan chia pudding.

  • Make the cashew chocolate milk. That is to say, it is so easy to make cashew milk at home, and it is so delicious that I hope you make it not only for this recipe of chocolate chia pudding. I hope you find more uses for it. If you want creamier cashew milk, soak the cashews for three hours overnight. Strain and blend with 3 1/2 cups of water, cocoa powder, vanilla extract, and maple syrup.
  • I like to use homemade cashew milk for this chia seed chocolate pudding, but other non-dairy milk works here, like store-bought or homemade almond milk.
  • If you are serving this chia pudding as a dessert, adjust the taste by adding a bit more sweetener.

  • Soak the chia seeds. The second step to make the healthy seed chia pudding is to soak the seeds in the chocolate cashew milk for 3 hours overnight. It is best if you place it in the fridge.
  • Before placing this in the fridge, make sure that you whisk the mixture until you can’t find chia seed clumps. Make sure to use a spatula to scrape the bowl to double-check that no seeds are stuck there.
  • The waiting. The third and hardest step of all. Waiting for this delicious pudding to be ready. Because the longer you wait, the yummier it will be; that it’s why there are so many overnight chia pudding recipes out there.

One secret is letting it soak for longer hours, and the other is using the best ingredients. Buy fresh ingredients and as close to nature as you can find. For example, buy the best chia seeds, cacao powder, and the healthiest sweetener.

    • But if your kids are not as adventurous with food as my kids are, you could blend the chia seeds when making the cashew milk. Adjust the liquid if needed. The idea is to get the best consistency you can get.

Chia pudding can be stored in the refrigerator in an airtight container for several days. The pudding will continue to thicken as it sits in the fridge, so you may need to add a little milk or water to thin it out before serving.

  • To store chia pudding, follow these steps:
    1. Transfer the chia pudding to an airtight container, such as a jar with a tight-fitting lid or a plastic container with a snap-on lid.
    2. Seal the container tightly and place it in the refrigerator.
    3. The chia pudding will keep in the refrigerator for up to 5 days.
    4. To serve the chia pudding, remove it from the refrigerator and stir it to ensure that the chia seeds are evenly distributed. If the pudding is too thick, you can add milk or water to thin it out.
    5. Serve the chia pudding cold or at room temperature, as desired.

  • To freeze: You can also freeze the chia pudding. To freeze chia pudding, transfer it to a sealable container or a plastic bag and place it in the freezer. The chia pudding will keep in the freezer for up to 3 months. When you are ready to eat the frozen chia pudding, thaw it in the refrigerator or at room temperature before serving.

  • 1/2 cup of chia
  • 1 cup cashews, unroasted
  • 4 tablespoons cocoa powder
  • 1/2 cup of maple syrup
  • 2 teaspoons of vanilla
  • 3 ½ cups of water

Instructions
 

  • Soak the cashews in clean water for at least 2 hours.
  • When they are ready, drain them very well and blend them with the cocoa, honey, vanilla and 3 1/2 cups of water.
  • Chocolate and chia pudding
  • In a large bowl put the chia and pour the chocolate on top. Stir occasionally, as chia seeds can weigh down.
  • Put in the fridge for at least 3 hours or overnight. The idea is to leave it with the thick consistency of a pudding.

Notes

  • If you feel that the cashew milk is very thick, put 1/4 more water. I used strawberries to serve it, but you can use raspberries, bananas, or any other fruit. It also tastes delicious if you sprinkle it with cinnamon and if you use it for dessert, add grated dark chocolate.
