5-ingredient nutty energy bites

Nuts, coconut, and dates energy balls. An amazing treat.

These lime-pecan-coconut energy bites are super easy and extremely delicious.

Energy bites are small balls or morsels of food that are used as a snack or to increase energy. They are often made with natural ingredients like fruits, nuts, seeds, dates, and oats.

ABOUT THIS RECIPE

These pecan coconut date balls also have lemon zest and a pinch of salt. They are an energy bomb and do not panic if you think they have a lot of calories or fat. They are good fats and good calories, the kind of fats and energy we need to think and survive.

INGREDIENTS OF THE ENERGY BITES

  • Unsweetened coconut flakes or shreds
  • Pitted dates
  • Pecans, but you could also use cashews, walnuts, or any other nut.
  • Lime zest. I like to use lime zest because I like the combination of flavors with the coconut. You could also use lemon zest.
  • Pinch of salt, do not skip the pinch of salt; this little pinch brings all the flavors together.

HOW TO MAKE THE ENERGY BITES?

  • In the bowl of the food processor (affiliate link), put the coconut and pulse until it is in small pieces.
  • Add the pitted dates and pulse 5 or 6 times until fully chopped. Add the nuts.
  • Add the lemon zest and a pinch of salt. Cover and turn on again until everything is well integrated.
  • With your hands, form balls. Store them in a jar in the fridge.

  • 1 cup pecans
  • 1 tablespoon lime zest
  • pinch of salt

Instructions
 

  • In the bowl of a food processor add the coconut and pulse until it is in small pieces.
  • Add dates and pulse again for 5 to 6 times until they are in small pieces.
  • Turn on the food processor and while running add the nuts.
  • Uncover and scrape the walls of the bowl with a spatula.
  • Add lime zest and a pinch of salt. Cover and turn again until everything is well integrated.
  • With your hands, form ballss tore in a jar in the fridge.
