These alcohol-free pineapple-mint margaritas are perfect for an afternoon with friends, and it’s so healthy that you can even have it for breakfast.

Can you believe that it’s almost “5 de mayo”? What a shock, right! Think about it … May 5 (Cinco de Mayo), Mother’s Day, end of school … Summer, half a year and then it’ll be Christmas before we know it … Well, I’m going a little too far, but I mean, this year is going by so fast! That’s why when Kate, my friend from the “Hola Jalapeño” blog, invited me to make a margarita I said, yes! I loved the idea of celebrating May, but I’m not much of tequila person, that’s why I made it alcohol-free, this way the whole family could drink a margarita as we celebrate this month together.

I like to make it with frozen pineapple, so I don’t have to put ice in it, and so it tastes more cocktail-like. I also put a little jalapeño so that at the end of each sip, this margarita has a kick which isn’t from tequila.

The mint and lemon make it super fresh, and when you add a touch of salt a common thing in most margaritas, it makes it a million times better! They are so GOOD and make the perfect mock cocktail. At home, everyone loved them, and the girls even gave me the idea that this recipe would be great as ice-pops and the truth is that they’re right.

Alcohol-free pineapple-mint margaritas
Ingredients
- 1 ½ cups of frozen pineapple in chunks
- 1/4 cup mint leaves
- 1 jalapeño
- 2 tablespoons agave syrup
- 3 tablespoons lemon juice
- ½-1 cup water
Instructions
- Mix all ingredients in the blender.
- Serve in glasses with ice and salted rim.
