This buffalo chickpeas salad with vegan homemade ranch will trick you into believing you are eating something at a fast food restaurant. But no, you will eat something healthy and good for your body from the first bite to the last. So, so good.

About this recipe

I have to confess that I am obsessed with Buffalo sauce, but I have never tried buffalo wings, and the truth is I will never feel like it.

But the good thing about following a vegan diet is that you will never miss dishes or ingredients; you have to be creative and look for plant-based ingredients.

This vegan ranch dressing recipe is perfect as a salad dressing, a dip for dipping veggies, or a drizzle over roasted potatoes, pizza, or cauliflower wings.

Ingredients to make the vegan buffalo sauce

  • Hot sauce. You can use Cholula or Frankie’s hot sauce (affiliate). If you have another favorite hot sauce, use it.
  • Oil or butter. I like to use avocado oil, but any other vegetable works well. You could also make a combination of oil and butter.
  • Garlic powder, check that it is only garlic powder, not salt with garlic powder.
  • Onion powder. Like the garlic salt, check that it is only onion powder.
  • Salt

INGREDIENTS TO MAKE the best vegan RANCH DRESSING

  • Yogurt. I use vegan yogurt from the Kite Hill brand or the Forager, but use whichever you like best. A good tip is to look for one that does not have sugar.
  • Mayonnaise. You can use homemade vegan mayonnaise or any other vegan mayo you can find on the market.
  • Garlic powder.
  • Onion powder.
  • Salt
  • Fresh dill, parsley, and chives. You can substitute by using dried dill, dried parsley and dried chives.

HOW TO MAKE CHICKPEAS IN BUFFALO SAUCE?

You put all the ingredients of the sauce in a pan. Mix so that the powders dissolve well. When they boil, add the chickpeas and leave for 5 minutes. Test and adjust the seasoning.

How to make homemade vegan ranch dressing?

In a medium bowl, mix the ingredients and let them rest for 5-10 minutes. Taste and adjust the seasoning if necessary; you may need more salt, herbs, or garlic powder.

 IMPORTANT NOTE

✨Use fresh herbs that are as fresh as possible, the fresher the better they taste. That's why it's important to adjust the flavor of your ranch dressing.

✨Chop the herbs really small and if you like them super super small, you can put them in a food processor and pulse until they are as small as you want.

✨Adjust to make it delicious; if you feel it is sweet and it needs a bit of acidity add lime or lemon juice. A teaspoon apple cider vinegar will work to.

Putting the salad together

And when you have the buffalo chickpeas and the vegan ranch dressing ready, the only thing left is to assemble the salad.

So, put some kale, carrots, celery sticks, cucumber, and buffalo chickpeas in a bowl, and finish with a couple of tablespoons of homemade ranch dressing.

Add other vegetables, such as peppers or green beans. You could chop everything and mix it up for an over-the-sink salad or make a burrito with chickpeas, dressing, and veggies.

Ingredients
  

Buffalo Chickpeas

  • 1 ½ cup chickpeas or 1 can
  • ¼ cup hot sauce
  • ¼ cup vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt

Homemade Ranch Dressing

  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons chopped parsley
  • 2 tablespoons chives or scallions finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ cup plain yogurt I use vegan yogurt
  • 2 tablespoons vegan mayonnaise
  • 1 teaspoon salt

Salad

  • 1 bunch kale washed and thick stems removed
  • 1 carrot cut into sticks
  • 1 cucumber cut into strips
  • 4 celery stalks cut into strips

Instructions
 

  • Put all the sauce ingredients in a pan and mix so that the powders dissolve well. When they start to boil, add the chickpeas and leave for 5 minutes. Test and adjust the seasoning.
  • For the homemade ranch, in a medium bowl mix the ingredients and let it rest for 5-10 minutes. Taste and adjust the seasoning if necessary, you may need more salt, more herbs or more garlic powder. Adjust the seasoning until delicous.
  • To serve the salad put a bed of kale, top with carrots, cucumber, and celery. Divide the chickpeas into 4 servings and serve on top of the salad, finish with a tablespoon or two of ranch dressing.
