What is dukkah?

Dukkah, also known as duqqa, is a mixture of spices, nuts, and seeds of Egyptian origin. The name comes from the Arabic “دقة” which means “to crush” or “to crush”, which describes the technique used to prepare the mixture.

Dukkah is traditionally used as a seasoning for bread. A piece of bread is dipped in olive oil and then dipped in the dukkah mixture for flavor. However, its use is not limited to this purpose. It can also be sprinkled over salads, roasted vegetables, eggs, or used as a marinade for meats.

  • Cucumber. For optimal results, it’s best to use English or Persian cucumbers when peeling and chopping, as they have fewer seeds.
  • Parsely. For the best flavor, it is recommended to use flat-leaf parsley that has been washed and chopped.
  • Red onion. For super thinly sliced red onion that has a strong bite, you can soak it in ice water to remove the spiciness.
  • Lime juice, when selecting limes, it is best to choose large, juicy ones with perfectly acidic juice.
  • Olive oil, look for a good one with a lot of flavor.

How to grate cauliflower?

If you want to grate cauliflower, there are various methods you can use. You can opt for a traditional box grater, a food processor, or even a knife.

Box Grater: Simply take a cauliflower floret and rub it against the large hole side of the grater.

Food processor: If you have a food processor, this might be the quickest and easiest way to grate the cauliflower. Add the florets to the processor and pulse until the cauliflower is the consistency of rice grains.

Knife: If you don’t have a grater or food processor, cut the cauliflower into small pieces with a knife. This method may take longer, but it will still give you similar results.

Ingredients for making dukkah

  • Roasted sesame seeds
  • Chopped almonds
  • Sunflower seeds
  • Coriander seeds (coriander seeds)
  • Cumin seeds
  • Fennel seeds
  • Add *optional

How to make the dukkah?

In a bowl, mix all the ingredients. Put the mixture in a frying pan on medium heat for two minutes or until the species become fragrant. Be careful not to burn them.

When they are ready, remove them from the heat and let cool, mixing from time to time. When they are cold you can put them on a board and chop as small as you can, or put them in a mortar or pestle and grind them until they look like bread crumbs, or put them in the bowl of the food processor and pulse.

Tips for making dukkah

Ingredients
  

Cauliflower Salad

  • 1/2 head of chopped cauliflower , as small as possible
  • 1 large cucumber , washed, peeled and chopped
  • 1 bunch of chopped parsley
  • 1/2 cup sliced ​​onion sliced ​​super thin
  • 2 large limes or lemons, the juice
  • 4 tablespoons of olive oil or more you find it necessary

Dukkha

  • 1/2 cup sesame seeds

Instructions
 

Cauliflower Salad.

  • Chop as small as you can the cauliflower; you can also put it in the bowl of the food processor with the blade attachment. Pulse it several times until it is as small as rice.
  • Put the chopped cauliflower in a large bowl and add the rest of the ingredients: cucumber, parsley, purple onion, lemon juice, olive oil, and salt.
  • Mix, cover, and place in the refrigerator for half an hour. Remove from the fridge and sprinkle the dukkah on top.
    Serve with pita bread or fresh homemade bread.

Dukkha

  • In a bowl mix all the ingredients.
  • Put the mixture in a frying pan on medium heat for two minutes or until the species become fragrant. Be careful not to burn them.
  • Once the ingredients are toasted, it is best to take them off the heat and allow them to cool down. Remember to stir the mixture occasionally during this process.
    Once the mixture has cooled down, you can either finely chop it on a board, grind it in a mortar until it resembles breadcrumbs, or pulse it several times in a food processor.

Notes

If you have any leftover dukkha from the cauliflower salad, make sure to store it in a sealed jar in a cool location.
