These collard greens burritos or wraps are the perfect solution when you need to eat a quick lunch, or you want to take a break from using the stove.

Last week both the kids and Sergio were out of town. No kids meant no soccer games or errands to run, so I decided to take a vacation day for myself. I tuned everything out… errands, work, and I even took a break from the kitchen. I was able to read and do something else, but the day came and went incredibly fast. It’s always ok to take a day off from the kitchen, but that doesn’t mean it’s ok to slip and eat something unhealthy. These burritos with collard green leaves are made with leftovers. Do you remember the Mexican quinoa and the Jalapeño hummus?

Well, the wraps with collard greens are made with the leftover quinoa, hummus, cucumber, red cabbage, and carrots. To prepare these collard green burritos takes no time; they are super easy, healthy, and fast! The beauty of this recipe is to make use of your leftovers, and if you don’t have collard greens, you can use lettuce, chard or even a tortilla stuffed with some greens and then everything else on top.
Tips, tricks &other recipes:
- As a
base you can use brown rice, quinoa, cauliflower rice, or zucchini noodles. - You can add guac, hummus or salsa.
- Tons of veggies, like carrots, red cabbage, avocado, cucumber,…
- And to finish it up
use a dressing or vinaigrette.

I’m thinking, that more than a recipe, this is more of a suggestion of what to do with all your tasty leftovers. But it is still pretty awesome. It is great because you can eat it on the go or wrap it up and put in a lunchbox for the kiddos. Here is my clean out the fridge recipe for

Collard greens burritos
Ingredients
- 4 collard greens leaves
- 1 cup quinoa
- ½ cup hummus
- 2 carrots grated
- 1 cucumber, julienned
- 1 cup red cabbage, sliced
Instructions
- Set the collard green leave and add ¼ cup of quinoa, 2 tablespoons of hummus, top with some carrots, cucmber and sliced red cabbage. Roll like a burrito, cut in half and enjoy.
