Easy Mixed berry galette (vegan recipe)

This easy mixed berry galette recipe is one of the best desserts you’ll make all year long. It is perfect for summer; berries are their best during this season, but it’s also very good throughout the year with frozen berries.

This recipe is vegan, easy to make, rustic, and impressive. Serve it on its own, sprinkled with powdered sugar (affiliate link), or with one or two scoops of vanilla ice cream.

A galette is a French term for this type of pie. It is not really a pie; it is spread out pastry dough that wraps around any filling, sweet or savory.

  • Always a showstopper. No matter how perfect or imperfect your berry galette is, it will always be perfect.

Berry galette ingredients

  • Vegan butter. You can use any brand you like, I like Miyoko’s or Country Crock, and if you prefer, you could substitute with coconut oil.
  • All-purpose flour (affiliate link). My number-one selection for baking galettes and pies. This flour has the perfect amount of gluten to give structure and the perfect flakiness to the crust. You can sub for gluten-free flour as long as it is one-to-one.
  • ICE water. This is important as we are working with butter, which gives us a flaky texture. If the water is not very cold, the butter will melt, and the crust’s texture won’t be flaky.
  • Cane sugar. Sugar brings out the maximum flavor of the fruit. This galette recipe calls for only half a cup, and I promise you it is more than enough.
  • Mixed berries. Again, use any berry you like.
  • Lemon juice, vanilla, salt
  • Coconut cream and turbinado sugar to brush the edges of the galette crust.

How to make the vegan berry galette

  1. Make your dough. Add the flour, salt, and butter to your food processor (affiliate link). Pulse until it resembles wet sand. Then, let the food processor (affiliate link) run at a slow speed while you add the ice water. In about 30 seconds, you should have a perfect and manageable pie crust. Wrap in kitchen plastic and chill in the fridge for at least 30 minutes.
  2. Prepare the mixed berries. Add the berries to the bowl and sprinkle with two tablespoons of flour. Add the cane sugar, lemon juice, vanilla, and a pinch of salt. Mix carefully.
  3. Roll the dough. Roll the galette dough over parchment paper into a flat circle. Place the berry mix in the center, leaving about 1/2 to 1 inch without filling. Carefully start folding the dough towards the filling to form a crust.
  4. Brush the edges. Brush the edges with whole fat coconut cream or any plant-based milk. Sprinkle the turbinado sugar around the edges. Bake until the berries are bubbling and the crust looks golden and delicious.
