This festive grilled vegetable sandwich is the best thing to have during the Holidays. It is so flavorful, healthy-ish and so fun to make.
Gotta love the Holidays, the food, the family, the laughter, the gifts, I mean there is so much to love. But for me, one of the best things to do is to cook together, to cook as a family. And when you can prepare a meal for the entire family at the same time it is a dream.

I set them on medium-high to make these festive grilled vegetable sandwiches.
And they came together in a pinch and were the perfect “light” lunch alternative to all the Holiday food we have been eating.
Cooking the sandwiches outside was such a treat. We were able to enjoy the lovely winter weather, sunny and a bit chilly.
To prepare these sandwiches start by lighting up the griddle (so easy to do it with its built-in igniter) and greasing the cooking surface. Then place the seasoned veggies and bread on top and let them cook until lightly browned, flip and let them cook on the other side.
Just imagine all the different types of vegetables you can grill and all the sandwiches you can make. Best of all at the same time. I used red cabbage, huge portobellos, and red onion slices to make 6 sandwiches.
To make the sandwich, spread Dijon mustard on one end of the bread, place the grilled vegetables on top, add a slice of smoked cheese (we use vegan cheese) and top it all with a sweet and spicy cranberry- jalapeño jam.
Just because you can´t make a festive sandwich without cranberries. Cranberries are festive, vibrant, delicious and for me, they scream HOLIDAYS.
This cranberry-jalapeño jam makes every bit of this sandwich so good that you will want to use the Blackstone Propane Gas Griddle to cook and cook more delicious things.

Festive Grilled Sandwiches recipe
- 1 tablespoon vegetable oil
- 12 slices sourdough bread
- 6 portobello mushrooms
- 6 thin slices red cabbage
- 6 thin slices red onion
- 6 smoked cheese slices we use vegan
- Dijon mustard
- Cranberry-jalapeño jam recipe follows
- Prepare the surface of the griddle with vegetable oil.
- Place the bread slices and vegetables on the griddle and cook on one side for approximately 3 minutes. Flip and cook for three minutes more.
- Spread dijon mustard on one side, put one slice of each vegetable and slice of cheese on top.
- Finish with a tablespoon of cranberry-jalapeño jam.
