How to cut a pineapple

Prepare your tools: Make sure you have a sharp chef’s knife, a cutting board, and a bowl or container to hold the pineapple pieces.

Remove the top and bottom: Start by cutting off the top of the pineapple, including the crown and about half an inch of the fruit. Then, cut off the bottom in the same manner, creating a stable, flat surface for the pineapple to stand on.

Remove the skin: Stand the pineapple upright on your cutting board. Starting from the top, carefully slice down the sides to remove the skin, following the natural curve of the pineapple. Cut deep enough to remove the skin and the eyes (brown spots) but not too much of the fruit. Rotate and repeat this process until the entire skin is removed. If any eyes remain, use a small paring knife or the tip of your chef’s knife to remove them.

Quarter the pineapple: With the pineapple still upright, cut it in half from top to bottom. Then, cut each half in half again to create four long quarters.

Remove the core: Each quarter of the pineapple will have a tough, fibrous core running along the edge. Place a quarter on the cutting board with the core facing up, and use your knife to carefully slice it away at an angle. Repeat this step for the remaining quarters. I do not remove the core, but if you do, save it for juice or a margarita.

Slice the pineapple: Lay each quarter flat on the cutting board and cut it into slices of your desired thickness.

  • Fresh peppermint, roughly chopped

  • Preheat the oven to 400ºF.
  • Peel and cut the pineapple and put the pieces on an oiled baking sheet
  • Mix the chipotle pepper powder, sugar, and salt in a dish.
  • Sprinkle the mixture on top of the pineapple.
  • Put in the oven for 15 minutes or until the sugar begins to brown.
  • Remove from the oven and finish with roughly chopped peppermint.

  • 1 peeled and sliced ripe pineapple
  • 2 tablespoons brown sugar muscovado or coconut sugar
  • 1 teaspoon chipotle chile powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon oil

If you change it for cayenne pepper, add 1/4 teaspoon instead of 1 teaspoon chili powder.
