What is ramen?

Ramen is a Japanese soup that has a super interesting history; it originated in China. Little by little, it has evolved to what we know today as a super-rich and flavorful soup, full of flavor with noodles and vegetables.

This ramen recipe is perfect for a rainy day, a cold day, or a fun meal with your family. It’s perfect for kids to eat lots of veggies and experience new flavors in a fun way.

Ingredients for a good homemade ramen

  • FOR THE BROTH
    • Garlic, onion, and ginger because they give incredible flavor and are the base of a good stew or broth.
    • Mushrooms, the flavor and umaminess in mushrooms make every bite explode our taste buds. Use the mushrooms you have at home, but for maximum flavor, use shiitakes or cremini.
    • Roasted Sweet Potato adds body and color to the broth. Besides, it raises our ramen’s nutritional value and the sweetness of the sweet potato perfectly balances the rest of the ingredients.
    • Peanut butter, use unsweetened peanut butter. You can make it at home if you don’t have unsweetened peanut butter.
  • RAMEN
    • Use the ramen noodles that you like the most. I really like the one from the Lotus brand which are made of rice and millet.
    • But the truth is that any type of noodles works with this vegan recipe.
    • You could also use zucchini noodles for a greener version of these ramen.

How to serve the homemade noodles?

The truth is that you can finish it as you want. The broth in this ramen is heavy and thick, so I like to finish it with raw carrots, roasted corn, chopped chives, and fresh herbs. Fresh and light ingredients.

Other delicious ideas to finish your ramen up:

  • Cilantro, basil or mint
  • Roasted or baked tofu
  • Mushrooms
  • Brussels sprouts or bock Choy
  • Spinach, kale, or other leafy greens
  • Crispy chili oil

And to finish and give it that perfect flavor with Asian notes, you put the tare. Tare is a sauce with super-concentrated flavors, and for me, it is the one that gives the final and special touch to all the ramen bowls.

  • Soy sauce or tamari
  • Brown sugar
  • Rice vinegar
  • Roasted sesame oil

Equipment

Ingredients
  

  • 1 tablespoon vegetable oil
  • ½ small onion
  • 4 cloves garlic
  • 1 piece ginger 1 inch or 2.5 cm approx.
  • ½ cup mushrooms sliced
  • ¼ cup unsweetened peanut butter
  • 1 roasted sweet potato
  • 6 cups vegetable broth or water
  • 10 oz noodles

Tare

  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons toasted sesame oil

Toppings

  • 2 carrots cut in julienne
  • 1 cup roasted corn
  • 3 scallions sliced
  • 10 basil or coriander leaves
  • crunchy chili oil

Instructions
 

  • In a stockpot, sauté the onion, garlic, ginger and mushrooms. When the onion is translucent add the peanut butter and the roasted sweet potato.
  • Add the vegetable broth or water and boil for 5 minutes. Blend carefully.
  • While cooking the noodles as indicated on the package. When ready, drain, rinse and set aside.
  • To make the tare, mix the ingredients in a bowl and set aside.
  • Serve the noodles on a plate, bathe with the broth, finish with the vegetables on top, a tablespoon of crunchy chili oil (if you are using it) and a drizzle of tare.

Notes

It is very easy to make and the broth can be stored in the refrigerator for a week without problems. If you want to keep it for longer, freeze it.
When you are ready to eat it, cook the noodles, tare and prepare the toppings.
In case you can’t get noodles, you can use fiseo or angel hair paste.
