Layered Mediterranean Hummus Platter from Pretty Simple Cooking

This is a very simple dish to put together and a crowd pleaser; you can use store-bought hummus or a homemade one, either way, would be delicious. This recipe is slightly adapted from "Pretty Simple Cooking" from Sonja and Alex Overhiser's cookbook.

I know I have told you a million times that I love cookbooks, I’m obsessed with them! I collect them; I read them at night before going to bed, I enjoy them so much and sometimes even cry when reading the intros and who the author dedicates the book too. But I enjoy them, even more, when I know a bit of the story behind the book and the authors.

Sonja and I met via Instagram, and when I learned the story of her son and his Mexican heritage, I immediately decided to share with her my authentic Mexican recipe for sopes.
I’m also a huge fan of her blog and her recipes, so when I learned that they were writing a cookbook, I couldn’t be happier.

You have to take a look at it. Its name is “Pretty Simple Cooking,” and it has “100 Delicious Vegetarian Recipes to Make You Fall in Love with Real Food”. The book has amazing photography and great illustrations; it is also pretty simple to follow, their ideas are pretty straightforward and align in a perfect way to mine. The recipes are vegetarian, simple yet super, super delicious and made with 100% real ingredients.

So to celebrate the launch of their cookbook, Sonja and Alex organized a worldwide party. The idea… to cook for friends or/and family and make at least one recipe from their cookbook. My theme for the party was a Mediterranean feast and dedicated it to my kids. I knew for sure, that as soon as they got back from school and saw the table set they were gonna be excited. My kids love hummus and Mediterranean food, so the Layered Mediterranean Hummus Platter from, Sonja and Alex’s cookbook was a total success between them.

Layered Mediterranean Hummus Platter

Ingredients
  

  • ¼ cup minced red onion
  • ½ cup chopped cucumber
  • ½ cup chopped artichoke hearts
  • 1/4 cup Kalamata olives chopped
  • 1/2 cup quartered cherry tomatoes
  • 11/2 cup hummus
  • 1 handful of cilantro to finish
  • Paprika for garnish
  • Squeeze of lemon juice
  • Pita bread or pita chips for serving

Instructions
 

  • Peel and chop the onions, rinse with cold water to remove the strong bite.
  • Peel the cucumber, and remove the seeds with a spoon, chop into small pieces.
  • Chop the artichoke hearts, olives and cherry tomatoes.
  • Spread the hummus on a large plate and sprinkle with the red onions, diced cucumber, chopped artichoke hearts, olives, cherry tomatoes and finish it up with chopped cilantro, paprika, and a squeeze of lemon juice.
  • Serve with pita bread or pita chips.
