These mango and strawberry ice-pops or paletas have to be on your “what to eat” list for this summer.
Santiago and Sofia are traveling, and it has made an enormous difference in my weekly shopping. Santiago is 14 and Sofia is 11 years old. They are going through this phase were, man, they EAT a lot. This week was hard for me to purchase less food than we needed. I did an awful job, at the end I bought more than we needed.
I had to go through all of my produce real fast because it ‘s summer, well almost, it officially begins on June 21. All the vegetables and fruit ripen faster during this time of the year. So this week I’ve been doing super easy recipes to take use everything that is overripe at home.
Mangos and strawberries were so ready to eat that I made these ice-pops. Only two ingredients: very ripe mangos and five strawberries. I don’t use sugar, but if you want you can add a bit to them. Mangos are so, so sweet that you barely need sugar. My kids love paletas, any type, any flavor! The like them so much that while I was taking these photos, a little hand appeared and stole one. I have this picture as evidence, ;).

Mango and strawberry ice pops
- 2 mangos
- 5 strawberries
- 1 cup of water
- 3 tablespoons of sugar optional
- Blend the mangoes, cup water and sugar, if you're using.
- Slice the strawberries.
- Pour the mango mixture into a mold of ice popsicles and add a few sliced strawberries.
- Freeze overnight.
