MELON POPS WITH MINT

This Mexican melon pops with mint is the easiest recipe in the world. It only takes two ingredients and you can make them for breakfast, snack, or with a bit of white wine.

I love these melon pops with mint because I can have them at any time of the day. Let me tell you why.

These Mexican ice pops are made with only two ingredients, seriously, only two: melon and mint. They don’t even have sugar in them. That’s why I know these ice pops are for every situation. They are so easy to make I only had to put two photos.

To make these ice pops use peeled melon, without seeds, in large chunks and throw them in the blender or food processor. Pulse them until everything is in small pieces. I like when my ice pops have a bit of texture, like the ones my mom used to buy me when I was young. They were full of fruit! I was in love with them!

Returning to how to make them, once they all the pieces are pulsed add the mint and pulse them again. And that’s it, really it’s that easy. Now just pour them in molds and throw them in the freezer.

  • Eat them for breakfast. They are perfect for those days when you are short on time and have to leave early. Well, one of those days, you can easily take one of these ice pops and eat them on the way. It’s like eating your fruit on the GO.   • You can also have this melon ice pops ready for any time you, or your kids, get a little hungry. No fruit to dice, no cutting board to clean, its all ready to eat. If you don’t have a mold, you can try to make this ice pops with mango and coconut.
  • You can also serve this ice pop recipe as a welcome drink for dinner. If you use wine glasses without a base you can serve white wine with an ice pop inside. I love this idea for a summer night on the beach. It’s like a sangria divided into parts. Cool right?

Ingredients
  

  • 1 peeled medium sized melon without seeds and in chunks
  • 10 mint leaves

Instructions
 

  • Put the melon in a blender or a food processor and pulse until everything is well chopped but not completely liquid.
  • Add the mint and pulse again
  • Pour into the ice pop molds and put the wooden sticks.
  • Freeze for 8 hours or until firm
