I spend my whole weekend with my daughters at their soccer tournament. I saw a total of eight…yes, EIGHT soccer games. By the last game, I was so confused, I couldn’t tell who was winning, or losing or what team was playing. I was cold, sleepy and I really wanted to go home. I know that I wasn’t the one playing, but I was starting to feel like maybe I was coming down with something and was craving to eat a bowl of warm soup. Thankfully I didn’t come down with anything, but Romina did because on our way home she started complaining of a sore throat. That’s why the first thing I did when we got back was to start preparing this pho with zucchini noodles that truly is a nutritional powerhouse. .
Pho is a Vietnamese soup that is usually made with rice noodles, but I love making it with zucchini noodles instead. I would suggest buying a Spiralizer because it’s quite wonderful and easy to use. I swore I would N-E-V-E-R buy it because I couldn’t fit another kitchen gadget in my house. Still, it was in the back of my mind so as soon as I found a little nook that was the perfect size to store it I bought it and have absolutely no regrets. The Spiralizer is amazing!
This pho recipe is as simple as boiling water and adding garlic(a natural antibiotic), ginger(anti-inflammatory and full of superpowers), chives( vitamins A, C, and K), shiitake mushrooms(give a boost for our immune system), clove, cinnamon, orange, anise, and lemon. When it’s ready you finish it off with tamari sauce, sesame oil, lemon juice, and fresh herbs. It’s a perfect combination of ingredients ready to attack any pesky cold or virus… besides tasting absolutely delicious.

Pho with zucchini noodles
- 4 cups of water
- 2-3 scallions roughly chopped
- 2 peeled garlic cloves
- 1 piece of ginger 2 in or so
- 1 serrano or jalapeño chile
- 10 sliced shiitake mushrooms
- 2 whole cloves
- 1 anis star
- 1 piece of cinnamon
- 1 slice of orange
- 1 slice of lemon
- Pinch of salt
- 4 zucchinis made noodles
- Tamari sauce
- Sesame oil
- Lemon juice
- In a pot put the water, scallions, garlic, ginger, shiitake mushrooms, peppers, clove, anise, cinnamon, orange slice, and the lemon slice. Put it on medium heat and when it starts to boil, leave it for 10-15 minutes.
- When you’re ready, pour the broth in a bowl, add the zucchini noodles, tamari sauce to taste, lemon juice, a drizzle of sesame oil and finish with a few leaves of cilantro, mint, and basil
