But not anymore; believe me, this granola made over the stove is so fast that it will only take five minutes of your time. And not only is it almost as fast as opening the cereal box with this healthy and vegan breakfast, but you will also only eat GOOD STUFF: no extra sugars or other tricky things.

Ingredients
  

  • 3 tablespoons coconut oil
  • 3 cups rolled oats
  • 3 tablespoons maple syrup
  • 1 tablespoon ground cinnamon
  • 3/4 cup coconut flakes
  • 1/2 cup raisins
  • 1/2 cup dried cherries or any other dried fruit
  • 1/4 cup pumpkin seeds
  • 3 tablespoons of chia seeds

Instructions
 

  • Put a large cast-iron pan on the stove over medium heat.
  • Add the coconut oil, oats, and maple syrup. Mix. At first, you will feel the mixture very sticky, but as the oat flakes roast, the mixture will feel loose again.
  • After about 3min add the cinnamon, coconut flakes, dried fruit, ​and pumpkin seeds, keep turning for about two more minutes or until you see that the coconut is starting to brown.
  • Turn off the heat, add the chia seeds, and anything else you want or have on hand.
  • Once it cools, store it in tightly closed jars in the cupboard.
