When I saw this idea on adding popcorn to tacos on this cookbook, my Mexican gene got scared. ? But later, the more I thought of it, the more I liked it. I just couldn’t think of a more different and fun way to eat tacos. And… of course to add (kind of hide) not very popular veggies in them.
You know I have a crush with zucchini , I prepare them as noodles , carpaccio , soup …. everything !!! Santiago and Romina kind of like them but not Sofia. So …. I made a delicious filling of zucchini, corn, and onions for the taquitos. To the popcorn, I add some chili powder and salt.

Tacos with popcorn, zucchini and corn
Ingredients
- For zucchini filling :
- 1 teaspoon neutral flavor oil or extra virgin olive oil
- 3/4 cup chopped onion very small
- 3 cups chopped zucchini
- 1 cup frozen corn
- pinch of salt
- For the salsa :
- 2 tablespoons mayonnaise vegenaise or your choice
- 1 tablespoon lemon juice
- 1 teaspoon chili powder
- Sea salt to taste
- For Popcorn :
- 4 cups popcorn all ready-made
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- 6-8 corn tortillas
Instructions
- To make zucchini : In a saucepan put the teaspoon oil and onion. Leave until ( onion ) is translucent and the zucchini, corn, and salt. Leave the zucchini and corn for about five minutes, do not leave them too much because they fall apart and are like mush.
- Add to the popcorn, salt and chile powder. Mix well .
- To make salsa , just mix all ingredients well .
- To assemble the taquitos , warm tortillas , put one or two tablespoons of zuchini with corn , a teaspoon of salsa and topp with popcorn .
