This three-layer chia pudding is great because it is easy, healthy, and DELICIOUS. The first layer is made with vanilla chia pudding, the middle layer is a creamy and decadent chocolate layer, and then all is topped with fresh cherries.

Cherries are one of my favorite fruits ever. Since I was a kid, anything cherry flavored was always my first pick. I love everything about them, the flavor, the form of the fruit, and all the stories behind them. I remember the first time I saw a cherry tree blossom; I was speechless… so much beauty left me paralyzed. Have you seen one?

I’m pretty sure that by now you’ve heard all the benefits. They are full of antioxidants and have tons of omega-3s fatty acids. These little gems are also full of protein and vitamins. They are the real deal when it comes to fiber and other fantastic health benefits. They are a true superfood!
What are the benefits of cherries?
Cherries, like chia seeds, are packed with nutrients; they are high in fiber, vitamins, and minerals. They are an excellent source of Vitamin C, B, and vitamin K.
Cherries are also rich in antioxidants and anti-inflammatory compounds. So research shows that they may help us with exercise recovery. They are also rich in potassium, they can help us improve our sleep quality, and probably the best part is that they are super easy to include in our diet. I love to have a big bowl of cherries in the fridge for my kids to snack.

ingredients for the vegan vanilla chia pudin
- 4 tablespoons chia seeds. I prepared it with regular chia seeds, but if you happen to have any picky eaters at home, you could also use white chia seeds or grounded chia seeds for a different consistency.
- 1 cup almond milk or another vegetable milk, like oat milk or cashew milk
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup or agave. You could also substitute with a pitted date or two.

- 4 tablespoons chia
- 1 cup almond milk, oat milk or even coconut milk
- 1 teaspoon vanilla extract
- 2 tablespoons of maple syrup or any other sweeteners of your choice
- 2 tablespoons of cocoa (affiliate link) powder
How to make the chocolate and vanilla pudding
- To make the vanilla chia pudding mix all the ingredients in a medium bowl or mason jar and let it rest for at least half an hour to overnight before serving.
- For the chocolate pudding, mix the ingredients in a bowl or a glass jar and let it rest for half an hour to overnight.
Other ideas for finishing the vegan chia pudding
- Use raspberries, blueberries or any other type of berries you like.
- Add a dollop of vegan yogurt, or vegan whipped coconut cream if you are serving this chia pudding as a dessert.
- Have fun adding more toppings like cacao nibs, cinnamon, peanut butter, or maybe some almond butter, or homemade granola.
- You can also make it with orange juice instead of vegetable milk.

To serve.
- In a glass or a bowl add 4 tablespoons of vanilla chia pudding, then 4 tablespoons of chocolate chia pudding.
- Finish with the halved cherries and garnish with a mint leaf.
