I think I ‘ve told you that my life is kinda crazy, hectic and there are millions of things always going on, but I love it. And I really think the more I have to do, the happier and productive I am. I love to have a big family and very active and sporty kids. But from time to time I need a moment of peace to rest ado to reconnect with all, especially with my husband.
That’s why this stay-in date idea with just some vegan cream cheese, bread, and wine, was perfect for us. And truthfully, I love these types of dates where there’s no specific occasion to celebrate, because in reality… I think there’s ALWAYS millions of things to celebrate and be thankful for. Plus, it’s always a good day to have a date with your favorite person in the world. Right??
That’s why while I was grocery shopping, I decided to buy these flowers, bread, and these cherry tomatoes. I got home and prepared the vegan cream cheese, put everything on a pretty cutting board, and served wine for each one of us. It was a surprise to Sergio, so the date was even better.

Just like I think that each day is full of reasons to celebrate, I also believe that elevating the moment with pretty flowers, tasty and healthy food, and good wine is super important. I served Decoy wines, which are from Sonoma County, and they are delicious. I served myself a glass of the California Rosé Wine, and I served Sergio some of the Decoy Sonoma County Merlot.
It was honestly so relaxing. We talked, planned the next few days of craziness, and just spent our Saturday afternoon happily. We had an AMAZING time!! I do need to confess that our date only lasted like an hour and a half though…at the most 2 hours until the kids got home, Miko wanted to go outside…etc.
So here is the recipe for this
vegan cream cheese

Vegan cream cheese
- 1 cup cashews soaked overnight or at least three hours
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 garlic clove squeezed
- 1 teaspoon sea salt
- Freshly ground black pepper
- ¼ teaspoon apple cider vinegar
- 2- 3 tablespoons water * if you need your blender to run better
- Put in blender or food processor all ingredients except herbs. Blend until it has a cream cheese consistency. Take the cheese and put in bowl.
- Check the seasoning and adjust if necessary, add the herbs if using.
