  • ½ cup cooked sweet potato
  • ½ cup almond milk
  • 1 teaspoon lemon juice
  • 1 tablespoon melted vegan butter

  • Add flour to a rolling pin and roll the dough to1/2 in thick, cut the circles.
  • Add the oil in a heavy pot and heat. Let the oil reach 350ºF and start frying the donuts. Do not overcrowd the pot. Turn the donuts halfway through.
  • Take them out and let them drain on a tray with paper towels or with a cooling rack.
  • To make the glassé mix the sugar and the lemon juice.
  • When the donuts are warm, dip them into the glaze and return to the cooling rack.
