I love avocados in smoothies, in salads, and desserts. They make magic in every recipe that they touch. Well, at least that happened in this recipe. Vegan lime pudding
Ingredients
- 1 avocado pitted
- 2 tablespoons lemon juice
- 1/4 cup maple honey
- 1/4 cup coconut cream
Topping
- 1/4 cup whole or whole wheat fillet
- 5 pitted dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon sea salt
Coconut cream to serve
Instructions
- Put all the ingredients in a food processor until creamy and well-stirred.Serve in cups or a large dessert mold or platter. Top each vegan lime pudding cup with coconut cream and the date, almond and coconut topping.To make the topping, just put everything in the food processor and pulse it until it has the consistency that you want. I like it with a lot of texture.Sprinkle it on top of the vegan lime pudding.Put in the refrigerator until you are ready to eat it.For coconut cream, use canned coconut cream or tetra pack, one whole fat.To serve you can also put lemon zest over it.
