This recipe for stovetop granola in five minutes is one of my household vegan breakfast favorites. It is nutritious, easy to make, and extremely delicious.

Ingredients
3tablespoonscoconut oil
3cupsrolled oats
3tablespoonsmaple syrup
1tablespoonground cinnamon
3/4cupcoconut flakes
1/2cupraisins
1/2cupdried cherries or any other dried fruit
1/4cuppumpkin seeds
3tablespoonsof chia seeds
Instructions
Put a large cast-iron pan on the stove over medium heat.
Add the coconut oil, oats, and maple syrup. Mix. At first, you will feel the mixture very sticky, but as the oat flakes roast, the mixture will feel loose again.
After about 3min add the cinnamon, coconut flakes, dried fruit, and pumpkin seeds, keep turning for about two more minutes or until you see that the coconut is starting to brown.
Turn off the heat, add the chia seeds, and anything else you want or have on hand.
Once it cools, store it in tightly closed jars in the cupboard.
