Ingredients
VINAIGRETTE
1tablespoonchopped shallot
1tablespoonwhite wine or champagne vinegar
3tablespoonsextra virgin olive oil
1teaspoonagave or maple syrup
1pinchsalt
SALAD
6handfuls arugula
1grapefruit
1avocado
1tablespoonroasted sesame seeds
Instructions
Mix the chopped shallot with the vinegar, the olive oil, the tablespoon of maple or agave syrup and the salt. Mix well and adjust the seasoning if necessary.
Put the arugula on a plate on top of the cubed grapefruit and the avocado slices.
Finish by gradually adding the dressing and sprinkling the sesame seeds.
Notes
How to store?This salad is best eaten the day you prepare it. It does not store well as the greens will start to wilt and lose their crispness.Prepare just before eating, and store the remaining dressing in a tightly closed jar in the fridge.
