Quinoa, black beans and cilantro and mint dressing
This is a recipe for a super salad with quinoa,beans, and a healthy creamy cilantro, mint dressing.

Ingredients
Dressing
1cupsilken tofu
1/2cupcilantro
1/4cupmint
3tablespoonslemon juice
1/4cupolive oil
1clovegarlic
1/2teaspoonagave or honey
1/2teaspoonsea salt
* optional 1/2 serrano chile
salad
5cupsof green leaves
1/2cupblack beans
1/2cupquinoa or brown rice already cooked
1/2cupdiced tomatoes or cherry tomatoes in half
1/4cuppumpkin seeds
1avocadodiced
Instructions
To make the dressing mix everything well in a blender. Test and adjust the flavor if necessary. Refrigerate while preparing the salad.
For the salad you can mix the quinoa, beans, seeds and tomatoes in a separate bowl with a pinch of salt. And then put the mixture on top of the green leaves and then dressing.
Another option is to put a bed of green leaves and add all the ingredients as layers and then drizzle with the dressing.
