Turn the oven to 350ºF and prepare a muffin tray with liners or oil it up.
Measure the cup of milk and add the teaspoon of vinegar. Leave aside.
In a large bowl, mix flour, baking powder, salt, baking soda, and cinnamon.
Then, add the milk with the vinegar, the apple puree, the maple syrup, the oil, and the vanilla.
Mix well and put the diced apple and thyme. Divide the mixture on the tray and bake for 20-25 minutes or until a toothpick comes out clean when inserted into a muffin.
Notes
These apple and thyme muffins are delicious if you sprinkle brown sugar on top before putting it in the oven.
