This recipe for vegan migas is an authentic Mexican recipe. With the difference that is not made with eggs, I use tofu. But it's just as delicious as the original recipe.

Ingredients
2tablespoonsvegetable oilI use avocado oil.
1white onion sliced into thin slices
6corn tortillas cut into small pieces
6-7oz.extra firm tofupressed and crumbled
Salt to taste

Instructions
In a pan over medium-high heat add the tortilla pieces and let them brown until golden.
Add the diced or sliced onion and let borown. By this time the tortilla pieces will be golden and crispy.
Add the crumbled tofu, a good pinch of salt and continue to brown until the tofu is dry and begining to brown.If you are using vegan egg, let over medium heat until the egg is done.
