Vegan glazed donuts

This recipe for these homemade yeast-free donuts is perfect. It makes fluffy and delicious vegan donuts glazed with a touch of lemon.

Equipment

Ingredients
  

  • ½ cup cooked sweet potato
  • ½ cup almond milk
  • 1 teaspoon lemon juice
  • 1 tablespoon melted vegan butter
  • 1 tablespoon oil
  • 1 teaspoon vanilla
  • ½ cup sugar
  • 2 cups flour
  • 2 ½ teaspoons baking powder
  • 4-6 cups vegetable oil

Glaze

  • ½ cup powdered sugar
  • 4 tablespoons lemon juice

Instructions
 

  • Mix the sweet potato, milk, sugar, lemon juice, butter, oil, and vanilla very well. When everything is entirely incorporated, add the powders.
  • Mix until a smooth dough comes together. Put the dough on a floured surface and knead until it does not stick, 5-7 times.
  • Add flour to a rolling pin and roll the dough to1/2 in thick, cut the circles.
  • Add the oil in a heavy pot and heat. Let the oil reach 350ºF and start frying the donuts. Do not overcrowd the pot. Turn the donuts halfway through.
  • Take them out and let them drain on a tray with paper towels or with a cooling rack.
  • To make the glassé mix the sugar and the lemon juice.
  • When the donuts are warm, dip them into the glaze and return to the cooling rack.
