Ingredients
2tablespoonsof oilneutral flavor
1cuponionminced
4cupsdiced sweet potato
1 ½cupsof cooked black beans
pinchof salt
4tablespoonsbbq sauce
1/2cabbage split as thin as possible
3tablespoonsof extra virgin olive oil
1tablespoonof lemon juice
salt to taste
12corn tortillas to make the tacos
Instructions
In a frying pan put the tablespoons of oil and the onion. When the onion is translucent add the sweet potato and a good pinch of salt.
Leave until golden brown on one side, and then flip. Be careful not to burn. When the sweet potatoes are cooked add the beans and the bbq sauce. Leave until everything is cooked and seasoned.
Slice the cabbage as thinly as possible, add the olive oil, salt, and lemon juice. Mix well with your hands, until everything is coated.
To make the tacos, heat the tortillas, add a little bean and sweet potato mixture, and finish with a handful of coleslaw and salsa verde.
