2poundsrainbow carrotspeeled
1tablespoonof extra virgin olive oil
1teaspoonfreshly ground black pepper
1teaspoonsalt
Cilantro pepita dressing
1cupcilantro
1serrano pepper
1/4cuppepitas
1teaspoonsalt
1tablespoon lemon juice
½cupolive oil
Instructions
Preheat the oven to 400ºF.
Place the carrots in a single layer on a baking sheet.
Drizzle with olive oil and season with salt and pepper.
Put in the oven for 20 to 25 minutes.
Cilantro pepita dressing
Add the ingredients to a food processor or blender. Blend until creamy, taste and adjust the flavor if necessary.
Serving
