Ingredients
  

  • For zucchini filling :
  • 1 teaspoon neutral flavor oil or extra virgin olive oil
  • 3/4 cup chopped onion very small
  • 3 cups chopped zucchini
  • 1 cup frozen corn
  • pinch of salt
  • For the salsa :
  • 2 tablespoons mayonnaise vegenaise or your choice
  • 1 tablespoon lemon juice
  • 1 teaspoon chili powder
  • Sea salt to taste
  • For Popcorn :
  • 4 cups popcorn all ready-made
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 6-8 corn tortillas

Instructions
 

  • To make zucchini : In a saucepan put the teaspoon oil and onion. Leave until ( onion ) is translucent and the zucchini, corn, and salt. Leave the zucchini and corn for about five minutes, do not leave them too much because they fall apart and are like mush.
  • Add to the popcorn, salt and chile powder. Mix well .
  • To make salsa , just mix all ingredients well .
  • To assemble the taquitos , warm tortillas , put one or two tablespoons of zuchini with corn , a teaspoon of salsa and topp with popcorn .

Notes

Usa la mezcla de chilito que tengas en casa, puede ser que pique o que no.
Los tacos prepáralos justo antes de comer para que las palomitas se mantengan crujientes.
